FIRNI/ PHIRNI



Firni is one of the most famous sweets in India. It is slightly different from rice kheer as it uses lesser quantity of rice. There are several methods of making this delicacy. I have given below a traditional recipe as made by my mother. It is simply delicious and takes about 40 minutes to prepare. 


Serves : 4
Ingredients

500 ml milk
3 tbsp rice
8 tbsp sugar
3 cardamoms
3 to 4 tbsp chopped nuts ( cashew nuts, almonds, raisins or figs)
1 tbsp oil
2 cups water

Method

Wash and soak the rice in water for about 30 minutes. Drain the excess water and grind the rice to a coarse paste. Set aside. Then grind the sugar and the cardamom seeds together into a powder. Now heat water in a pan and add the rice paste to it. Bring it to a boil and keep stirring to prevent the rice from sticking to the pan. Simultaneously, heat the milk in another vessel and bring to a boil, then reduce the heat and let it cook for about 10 minutes. (Rice can also be cooked in the milk itself instead of water but it takes more time to cook hence this method is followed.) 

Once the rice is cooked, add the milk and the powdered sugar and cardamom. Mix well and cook for about 10 minutes. Keep stirring to prevent it from sticking to the pan. When it attains the desired consistency, switch off the gas and pour into bowls. Allow it to come to room temperature. Then stir fry the chopped nuts in oil for a few minutes till they change colour. Garnish the nuts on top. Serve the firni hot or refrigerate for atleast 2 hours and serve cold.
