CHICKEN KHURMA

Chicken khurma is a very delicious and popular curry most often eaten with pulao. Given below is a traditional recipe which is very easy to make.




Serves: 6
Ingredients

1/2 kilo chicken pieces
2 tbsp oil
2 cardamoms
1 cinnamon
2 cloves
1 1/2 tbsp garlic paste
1 1/2 tbsp ginger paste
4 big tomatoes pureed
1/2 cup curd
1 cup ground coconut
1 big onion chopped
2 tsp red chilli powder
1 tsp salt
juice of 1/2 lemon
coriander and mint leaves

Method

Take a pressure cooker, add oil, cloves, cardamoms, cinnamon and onions and saute for a few minutes. Then add garlic paste, ginger paste, red chilli powder and salt. Mix well. Then add tomatoes, and curd. Stir well and cook for a minute. Now add the chicken pieces and mix well with the gravy. Then dissolve the coconut in 3 cups water and add to the gravy along with coriander and mint leaves. Bring it to a boil. Close the lid and pressure cook for about 10 minutes. Then add lime juice, mix well and bring to a boil. Serve hot with pulao.

VEGETABLE KOFTE





Ingredients

3 potatoes
1 carrot
½ cup peas
4 to 5 beans
½ tsp salt
1 tsp red chilli powder
½ tsp cumin powder
¼ tsp dry mango powder
Chopped coriander leaves
1 to 2 tbsp gram flour (besan)
Oil for frying

Method

Clean and chop all the vegetables into small pieces. Then steam or boil them with ¼ tsp salt until cooked. Remove any excess water and mash coarsely. Allow it to cool. Add all the other ingredients to the cooked vegetables and mix well. Check for taste. Add salt, chilli powder or dry mango powder as per your taste. Then heat oil in a pan, take small balls from the vegetable mixture and deep fry in hot oil till golden brown in colour. Serve vegetable koftas with tomato ketchup or any chutney of your choice.
