MANGO MILKSHAKE AND MANGO DESSERT



Mangoes are one of the most cultivated fruits in the world. Raw mangoes are used for making chutneys and curries while the ripe ones are used to make juices, smoothies, aamras, lassi, ice creams, etc. I have given below two recipes using Mangoes, one is a Mango milkshake which is a perfect way to beat the heat. And the other is Mango dessert that can be served as a chilled dessert after a meal. The consistency of the dessert lies somewhere between a custard and an ice cream and tastes delicious.

CAULIFLOWER/ GOBI MANCHURIAN DRY





Cauliflower is a versatile vegetable and adds flavour and taste to any dish. It can be steamed, boiled, fried or roasted. Cauliflower Manchurian or Gobi Manchurian is very popular dish in India. It can be served as a starter or with fried rice or noodles.

PRESENTING “GUEST QUEST” – MY INAUGURAL BLOG EVENT




I am excited and pleased to present my first event “Guest Quest” at Amina Creations. The theme of Guest quest is recipes of dishes that we serve our guests in the evenings. Since we always serve our best dishes to our guests, this event will bring out delicious recipes from homes across the world to one platform. In this way we can learn new recipes and impress our relatives and friends next time they visit us. There are plenty of options available like samosas, cutlets, chips, fries, juices, smoothies, sweets, desserts, cakes, muffins, etc … the list goes on. This event runs for 60 days, so send in your entries from 25th April till 25th June 2012.


Now coming to the interesting part, I have a small prize waiting for the best entry. It is “Low calorie: Healthy Cooking” cookbook by noted cookbook author Tarla Dalal. In addition to this the winner's recipe and link will be featured in my blog under the title of Guest Quest champion.

WHOLE WHEAT BUTTER COOKIES (EGGLESS)




We usually prepare butter cookies using all purpose flour, but to make them more wholesome, I substituted all purpose flour with Whole wheat flour. And the result was simply fantastic. The cookies tasted crunchy and delicious. Since these cookies are egg less, vegetarians can also try this. This recipe yields nearly 2 dozen cookies.

FISH CURRY





Fish is a rich source of proteins and Omega 3 fatty acids which  are very good for the body. It is low in fat and is also rich in calcium and minerals. Hence it is recommended over other meats like lamb and chicken meat which contain fats. I have given below a simple recipe to make fish curry. The list of ingredients is long, but it gets done really fast and tastes delicious.

HOW TO MAKE SOFT GHEE MYSORE PAK AT HOME




Mysore pak is one of the most popular sweets in India. Originally from Mysore in Karnataka, this delicacy is made using besan, ghee (clarified butter) and sugar and is available in almost all parts of the country. I am giving below a very simple recipe to make authentic soft melt in the mouth ghee Mysore pak at home. I would recommend this to everyone as it tastes delicious and can be cooked in less than 10 minutes.

MINI SAMBAR IDLI






Sambar idli is a very popular dish in South India. Normal sized or mini (button) idlis are soaked in delicious sambar (lentil gravy) and served. The mini idlis or 14 idlis served in several vegetarian restaurants like Saravana bhavan are very popular. Here the idlis are literally floating in the sambar. This is my mother's recipe which can be used to recreate the delicious taste of idli sambar at home.
